The Romantic Ramparts of Signagi: Walk the cobblestone streets of this beautifully preserved 18th-century hilltop town, affectionately known as the "City of Love." You will climb up the ancient stone defensive walls and towers that wrap around the ridge, taking in endless, breathtaking panoramic views over the vast Alazani Valley below.
The Ancient Monastic Cellar of Ikalto: Step back into history at the Ikalto Monastery and Academy, founded in the 6th century. This historic center was once a premier medieval university where Georgia's greatest minds studied philosophy, theology, and the scientific art of winemaking. You can view the remains of the ancient monastic marani (wine cellar) and its centuries-old clay vessels.
The Aristocratic Tsinandali Estate: Tour the elegant, 19th-century palace and manicured English gardens of Prince Alexander Chavchavadze. A brilliant poet and public figure, Chavchavadze was the first to blend European winemaking techniques with traditional Georgian practices. You will explore his historic cellars, which still house a priceless collection of vintage wines dating back to 1814.
Traditional Shoti Bread & Churchkhela Masterclass: Duck into a rustic village bakery to watch bakers slap canoe-shaped Shoti bread onto the blazing inner clay walls of a subterranean Tone oven. You will also try your hand at stringing walnuts and dipping them into a thick, simmering pot of grape-juice juice roux (Tatara) to make your own authentic Churchkhela candy.
The Colossal Khareba Winery Tunnel: Venture deep inside a mountain ridge near Kvareli to explore a massive, 7.7-kilometer military tunnel system originally built during the Soviet era. Today, it has been transformed into a world-class wine cellar where over 25,000 bottles of premium Kakhetian wine are naturally aged at a perfect, year-round underground temperature.
A Traditional Alazani Supra (Feast): Conclude your exploration by sitting down to a long, celebratory Kakhetian dinner in a village home or boutique vineyard. The table will be piled high with traditional regional specialties, including Mtsvadi (pork skewers grilled directly over dry grapevines), fresh local cheeses, and rich walnut-based dishes, all guided by a Tamada (toastmaster) leading poetic, traditional toasts.
